GIANT PRAWNS are extraordinary. Bigger than shrimp but loaded with shrimp flavor; smaller than lobsters but full of meat that can be cut in chunks, there is little that these huge freshwater shellfish cannot do. Giant prawns thrive in shellfish farms, beginning their lives in brackish water, then seeking clearer water in which to grow to a weight of 3 or 4 ounces apiece. Giant prawn aquaculture began approximately 40 years ago in Malaysia and Thailand and has spread to other countries including the southern U.S. The size of these “colossal†may be the origin of “throw another shrimp on the barbie.†Farm-raised in Bangladesh.
