Yellow Perch
YELLOW PERCH inhabit cold northern lakes nearly all the way around the globe. A sport-fishing favorite, mature yellow perch are as long as 12 inches. Whether cooked as panfish or filleted for more complex recipes, yellow perch provides a flaky, delicate, tasty flesh that combines well with simple seasonings. “Perch,†like “sheep,†is both singular and plural and, where you catch one yellow perch, there are sure to be more. The yellow perch takes its name from the golden cast of its skin. Ours are wild-caught in Canada. Priced per pound and weighed as whole fish.
