OCEAN PERCH is actually a member of the extended Pacific rockfish family and serves as a wonderful example of how local names for fish persist, no matter what biologists say. “Ocean perch†is also known as “redfish,†“rockfish,†“red bream,†and “rosefish,†among many names. Like red snapper, ocean perch has consistently red skin, a firm flesh and a light hint of the salt waters where it makes its home. “Ocean perch†under several of its many names can be found in both Pacific and Atlantic waters (in the Atlantic, one may hear it described as “Norway haddock,†even though it is a relatively small fish).
