Salad or cocktail forks
1 pt shucked oysters, drained and chilled
Butter lettuce, radicchio, Belgian endive or other lettuce leaves
Cocktail sauce (see Easy Fish Sauces or use commercially-made cocktail sauce)
Line dishes or plates with lettuce leaves. Mound drained oysters in center. Add, or serve separately, cocktail sauce and lemon wedge to each cocktail.
