YELLOW PERCH inhabit cold northern lakes nearly all the way around the globe. A sport-fishing favorite, mature yellow perch are as long as 12 inches. Whether cooked as panfish or filleted for more complex recipes, yellow perch provides a flaky, delicate, tasty flesh that combines well with simple seasonings. “Perch,” like “sheep,” is both singular and plural and, where you catch one yellow perch, there are sure to be more.
